Vitamin C
Vitamin C deficiency is rare in places where people have access
to a variety of foods, but it can still happen.
People most at risk include:
● Those who eat very limited diets, especially with few fruits and
vegetables.
● People with digestive issues like Crohn’s disease or celiac
disease, which make it harder to absorb nutrients.
● People with serious chronic illnesses, such as advanced
kidney disease.
● Smokers and those around smoke, since smoking uses up
vitamin C in the body.
● Infants fed only boiled or evaporated milk, because heating
destroys the small amount of vitamin C in cow’s milk.
When to use this test:
● The diet lacks fruits and vegetables, especially in cases of
extreme food restriction or disordered eating.
