Understanding Cross-Reactivity in Gluten Sensitivity
Even when patients eliminate gluten, many continue to
experience symptoms. One significant reason for this is
cross-reactivity, where the immune system targets proteins in
non-gluten foods due to structural similarities with gluten proteins
